Back to school for Autumn
School is back this week. Miracle of all Miracles!
Now is the time to check your cupboards and make sure you are stocked up so no little tummies go hungry.
To help you out I’m sharing my first week’s lunch roundup. Lucky us, it’s only 4 days worth – Thank God for Public Holidays!!
Himself and I are having leftover vietnamese style chicken salad (on the dinner menu tonight), chicken & corn soup with cheesy sandwiches, gourmet chicken & antipasti sandwiches and garden salad with chicken, fetta and boiled eggs.
The girls menu this week:
Tues: Leftover Chicken & Fetta Pizza, Hummus & Carrot, Fruit and Mini Rasperry Milkshake
Wed: Zucchini Fritters, Crackers and Cream Cheese Dip, Fruit & Passionfruit Yoghurt Squeezy
Thurs: Potato & Ham Bake with Salad, Homemade Trail Mix, Hummus, Crackers and Fruit
Fri: Pumpkin & Broccoli Mac & Cheese (served hot), Mini Blueberry Muffins, Fruit & Mini Fruit Smoothie
Every item here keeps perfectly well in the fridge for a week. The only things I would wait to add on the day include the banana and crackers. The Mac & Cheese is frozen and gets heated and put in the thermos just before we leave for school.
Meal Prep is all about saving time. I do this all on a weekend so during the week I have more time to spend doing other things. I never have to scramble for snacks, or stare at the fridge and think “what can I take to eat today?”. It also saves the expense of several lunch orders a week – which I totally would be stuck with otherwise.
