BBQ Chicken Lunchbox Pizzas
If you need a quick addition to the lunchbox for this week – how about some mini pizzas?
I find pizza is great for school lunches as it’s easy to make, keeps well at length, is portable, requires no wrapping and can be made in any flavour combination you like. This week we made bbq chicken style lunchbox pizzas (so called as they are the perfect size for fitting in a lunchbox). I make the dough the easy way (in the bread maker!) but if you like doing it in a Thermie or indeed even the old fashioned way then go ahead. It’s just a matter of tearing off a small piece of dough big enough to fit in your palm and rolling/flattening on to a tray. I got about 22 mini pizzas from this lot, albeit not all being exactly the same size.
Ingredients wise – it’s a matter of choice. I didn’t have much in the fridge at the time so settled on a swipe of mayo, a swirl of bbq sauce, shredded chicken, italian pizza herbs and a little cheese for topping.
So fast, and so good!
TOP TIP: These pizzas once cooled, can be flash frozen on a tray and then transferred to an airtight container or ziplock bag in the freezer. Pizzas keep up to 4 weeks.
