Vegetable and Chicken Lasagne made easy!
Forget regular Lasagne, this chicken and vegetable version is a new twist on the original and makes the most of all the leftover veggies in your fridge.
I did a bit of clean out of the crisper and popped in a whole load of half-finished, slightly sad looking vegetables and herbs. I even used the leftover salad from the last nights dinner! It all went into the food processor with garlic, salt and pepper and whizzed up into a big vegetable mush.
This I fried off in some oil and mixed with the sliced, pre-cooked chicken, a whole bottle of passata and a good few dollops of tomato paste. Making the béchamel as normal, I assembled the whole thing in my biggest dish and refrigerated for a midweek meal.
So easy! All we had to do was whip it out of the fridge, into the oven and 40mins later my house is smelling like the back kitchen of your local italian restaurant. Dinners Up – Pass the forks please!!
