New girl at work and Jar Salad success!
I was the “new girl” today. My first day back at full time work since before Miss E was born – so it’s been over 6 years!
The people were lovely and the company has a great culture. Win.
I am officially EXHAUSTED though. Getting my head around new computer systems and terminology. My head is pounding and I’m dying to get to bed and sleep.
I packed a jar salad for my lunch and I know people that saw it on Instagram were interested to see how it went and I’m happy to report it went well! No sogginess and all kinds of delicious!
Jar Salad with lots of yummy bits…
Add into your jar in the following order…
A lug of olive oil and a good squeeze of lemon.
A small handful of feta cubes.
A small handful of chopped snow peas.
Fresh baby salad leaves (as dry as you can get them).
A sprinkle of fresh coriander leaves.
A small handful of avocado cubes.
Pop a dry salad leaf of top to separate.
Two teaspoons of crunchy noodles.
Two teaspoons each of pepitas and sunflower seeds.
Try and keep upright until ready to eat. Then tip and give it a shake around (you’ll need to leave a bit of room at the top to allow it to move around, although I found it did settle by the time I ate it at lunchtime).
