Road Test Tuesday – McCormick Man Can Giveaway!
When the team at McCormick’s recently asked us if our hubbies would like to try a spot of cooking – Mel and I just could not resist! Both Himself and A1 love getting in the kitchen so this Man Can BBQ Challenge was just up their alley (it also meant we had some time off – Score!).
McCormick has created this great new range of sauces and they are really yum, not to mention very very versatile. Currently on sale in your local supermarket, they really do give loads of opportunity to create fantastic new meals.
Mel and I had a little discussion and the boys got thinking and creating and the funny thing was we had a little communication breakdown and both hubbies ended up doing versions of the same thing!! Quite Amusing. The fact of the matter is, Pulled Pork with Slaw is REALLY REALLY good, no matter how it’s done! Himself and A1 both used the Vintage Smokehouse sauce and created totally different versions of this fantastic dish.
Himself went a bit fancy pants and headed to the BBQ shop for Apple wood chips and a smoker. He smoked and slow roasted a pork shoulder (skin on) in the BBQ and finished off the crackling under the grill. The pork was basted with the Vintage Smokehouse sauce and the meat just fell away from the bone when it was done. It was heavenly! The remainder of the sauce was mixed through the shredded meat, sloppy joe style and served with crunchy fresh coleslaw and slices of crackling.
A1’s marinade was used not only on the pulled pork he made but also as the sauce in a chicken stir fry – he just added in small knob of grated ginger too…
A1’s Cracking Smoky Marinade (with crispy crackling on the side)
1 rolled pork shoulder
2.5 TB Brown Sugar
1 tspn smoked paprika
1 tspn grown coriander seeds
1 tspn cumin
1/4 tspn allspice
Pinch sea salt flakes
1 TB white wine vinegar
3 TB Vintage Smokehouse Sauce
3 cloves of garlic – crushed
Cracked pepper to taste
A1 removed the skin from the pork, scored the skin with a sharp knife and rubbed with olive oil and salt.
Place the skin on a wire rack in the oven (with a pan underneath to catch any drips) and cook for around 10 minutes at 220°C, then turn down to 180°C and cook until golden and irresistible.
Pulled Pork Method
Mix all marinade ingredients together.
Cover pork with marinade and cook on low in the slow cooker for around 8-10 hours (depending on size).
Remove from slow cooker and use a fork to pull the meat away. SO delicious!
Serve on bread rolls with a slaw made from crispy green apples, carrot and red cabbage and a squeeze of lime juice.
