Menu plan Monday – Budget Week
It’s been a while since I’ve shared a menu plan. At the moment though we are on a super strict budget army work hours are dying a slow death at this time of year. I’m having to look at the reality of applying for jobs that fit in with kids/childcare/school/A1’s work – the usual juggling act!
In the meantime, I’m using Danni’s fabulous printable family planner to plan out our meals and keep track of what everyone is up to at a glance.
Pay day is next Thursday. Sigh. That’s a long way away! So I’m making use of what we already have on hand in the fridge and freezer for dinner, while trying to stretch meats across more than one meal.
This is what I came up with…
Monday: Left over Roast Lamb Pie – both kids happily eat this. It’s so easy to make and really does taste awesome!
Tuesday: Thermomix Healthy Roast Chicken (Devil of a Cookbook)
Wednesday: Chicken Udon Noodle Soup (using the amazing chicken stock left over from last nights dinner and some of the leftover chicken, shredded).
Thursday: Tacos – using budget beef mince (I drain off the excess fat as it cooks). One of the few meals that is guaranteed to get eaten by both kids with no fuss!
Friday: Slow Cooker Jacket Potatoes served with leftover Taco meat and toppings.
Saturday: Fried Rice – using up veggies from the fridge and frozen veg and some chicken and ham. I have frozen rice, leftover from a previous meal.
Sunday: Home made pizza. More fridge leftovers. The thermomix EDC dough recipe makes three thin bases. I make two regular pizzas and 4 pizza pockets (for the kids lunches).
