Egg Wraps with Steak, Fetta & Minty Peas

EGG WRAPS WITH STEAK, FETTA AND MINTY PEAS
YOU WILL NEED
- 2 Eggs – whisked
- 1/2 still warm Porterhouse Steak, (approx. 100g) cooked the way you like it and then sliced very thinly
- 1/2 cup Baby Peas – cooked and warm
- 1 x small handful fresh mint – chopped
- 40g Fetta – crumbled
- S&P to season
THE HOW TO
Heat a small frypan to medium and liberally add good olive oil (you don’t want your eggs to stick!);
Pour in your whisked eggs and tilt the pan around so the egg mixture covers the entire pan;
Add the steak, peas, chopped mint and fetta in a line down the centre of the circle and season with salt and pepper;
Flip the sides off the egg wrap up and over the top and turn out onto a warm plate to serve
It sounds so simple yet this is a filling and very easy meal that is truly and honestly delicious!!
