Chia & Muesli Yoghurt
As someone who isn’t an early riser or big breakfast eater, it has been hard over the years to find things I LIKE to have in the mornings. It’s also difficult to find something easily whipped up at 6am when you are half asleep and your early bird children are demanding food.
I woke at 5:45am last Monday to some very strange noises. It sounded like someone washing up. In my sink. Turns out it was someone washing up. A 2.5yr old someone who had woken, climbed out of her bed, taken the big step from the bathroom and helped herself to my dishwashing liquid and scrubbers. Sigh. After I had cleaned up the floor, the step, the sink, the benches AND the child, I was left with zero interest in breakfast making and the surging desire to wake Daddy (after his midnight shift no less) to deal with it all and go back to bed myself. The last thing I wanted to do was make breakfast.
Since the holidays had just finished, there was still remnants of holiday food in our house (i.e Rice Bubbles, stuff I don’t normally purchase) and I looked at the box and decided I was really over giving them that stuff. So – I scoured my pantry and came up with a fast and healthy breakfast option. It must be fabulous because Miss Z came back for seconds. Hell – even I ate it!
- ½ cup Muesli (made or bought)
- 2 Teaspoons Chia Seeds
- 1 x Cup Vanilla/Greek Yoghurt (made or bought)
- A squeeze of Honey
- Grab a glass or bowl and add to that your muesli;
- Top with Yoghurt, then the drizzle of Honey and finally sprinkle over the Chia seeds;
- Grab a spoon and enjoy!
