Worldly Wednesday – Super Fast Nachos!
These nachos are easy and fast, which makes them a perfect midweek meal! You can add as much to the meat as you like ( extra vegetables, more beans etc) which boosts the nutrition value of this meal. I normally opt for a meat and beans mix.
Serve alongside a salad for a great meal!
Super Easy Nachos
YOU WILL NEED
500g lean beef mince
2 cans red kidney beans (drained)
1 onion, chopped finely
1 x sachet taco seasoning
1 x small jar spicy tomato salsa
1 large bag corn chips
1x cup grated tasty cheese
Sour cream, avocado & coriander to serve
THE HOW TO
Cook your onion in a pan until soft, then add your mince and brown;
Add the beans and taco seasoning and cook until done, adding a little water if needed to create a little sauce;
Lastly, add your salsa and mix through;
Place your corn chips in a large oven proof dish and top with the meat mixture and cheese. Be sure not to completely cover too many of the chips, we don’t want them all soggy!
Place in a hot (200degC) oven for about 10-15 mins until the cheese has melted and the chips are crispy
Serve in the dish and top with avocado, sour cream and chopped coriander.
