Pizza pockets are perfect for changing up the boring sandwich in a lunchbox, but not so in your face as a slice of leftover pizza from last nights dinner!
I find that both my kids will eat a pizza pocket whole, but when faced with a slice of pizza, will just eat the topping and leave the base.
They are simple to make and perfect if you are making pizza for dinner. Just keep aside a small chunk of dough for each lunchbox, make up and bake along with your dinner pizza, cool and pop in the lunchbox.
You can also freeze these before baking. To cook, allow to thaw a little before cooking at 200°C for around 15 minutes.
- Pizza dough*
- Tomato paste (or tomato or BBQ sauce)
- Pizza toppings of your choice - I usually go with cheese, olives, a meat of some sort and some grated zucchini, baby spinach, boccocini, and capsicum. To start with go with what you know they like. Of they eat it, then you can start sneaking in extra veg next time!
- Preheat oven to 200°C
- Grab a small handful of dough and roll out thinly (to about 3-4mm - if you make it too thin you'll end up with holes in your pocket - never a good thing)
- Spread your tomato paste/sauce over your pizza base, leaving a 1.5cm gap from the edges.
- Add your toppings, being careful not to add too much.
- Take an edge piece of dough and fold into the middle of the pizza. Continue to do this until all of the edges are folded in, using a little water to help the edges adhere to each other and seal. It will look a little like a pork bun.
- Place on a tray lined with baking paper and bake until the dough is crisp (around 10-15 minutes).
