Road Test Tuesday – Coles Create & Bake: Salted Peanut Butter Brownie Cookies
My second chance of playing around with the Coles Create and Bake range ended up with these. Tiny Little bites of heavenly goodness. It just goes to show what you can do if you ignore the box instructions!
Here is a quick low-down on how you can whip up these scrumptious delights yourself:
Preheat your oven to 180Degrees C:
Purchase 1 x box of Coles Create & Bake Brownie Mix. Completely Ignore the instructions on the box! – Instead, add to your mix 2 eggs and 1/2 cup butter. Mix well in your mixer until smooth;
Roll into balls and place on a baking tray;
Bake for approx. 10 – 15mins until done.
Once your cookies are cooled, place into your mixer a 1/2 cup of peanut butter, 1/2 cup of white chocolate ganache and a good pinch of sea salt. Mix until well combined and smooth;
Place a spoonful of ganache mix onto the back of one cookie and top with another to create a little sandwich. Repeat with all. Refrigerate until the ganache has set a little and be ready to hand out to tumultuous applause.
