Worldly Wednesday – Chocolate Chip Hot Cross Buns

Chocolate Chip Hot Cross Buns
A girl I used to work with got me hooked on these but sadly they are only available for about 6 months of the year in stores 🙁
However my life is now changed forever! I can make them myself and I can make them GOOD!
Here is the recipe if you want to try or yourself .
Choc Chip Hot Cross Buns
First make the dough
1. Whisk 1 tablespoon of dried yeast and 1 tablespoon of caster sugar in a jug containing 3/4 cup of warm milk. Set aside of 10 mis are until frothy;
2. Whisk into the yeast mixture, 1/2 cup milk, 50g of melted butter, and 1 egg, lightly whisked;
3. Combine 3 1/2 cups of Bakers ( or plain) flour, 1/4 cup of cocoa powder, 1/4 cup of caster sugar, 3/4 cup of choc chips, and a pinch of salt, in a bowl;
4. Make a well in the centre and add the yeast mixture. Using a wooden spoon stir until all combined, then use your hands to bring the dough together in the bowl;
5. Turn onto a floured surface and knead for 10 minutes or until smooth and elastic;
6. Place in a greased bowl and cover with cling film. Leave to rise for 1 1/2 hours.
Then shape your buns
1. Punch down the centre of the dough to remove any air bubbles. Knead for 2 minutes then shape into 12 buns ( they are quite large so even 16 would work for smaller buns);
2. Line a baking pan with baking paper and lightly grease with butter;
3. Place the buns side by side in the pan and cover with a clean tea towel and leave to rise for 30 mins.
Bake and decorate!
1. Preheat oven to 200 degrees. Combine 1 tablespoon of flour and 1 tablespoon of cocoa powder in a snap lock bag. Add just enough water to make a paste. Cut the corner of the bag to make a 2mm hole and pipe crosses on your buns;
2. Bake for 10 minutes, then reduce oven temp to 160 degrees and bake for another 20 mins. Or until golden and cooked through;
3. Meanwhile ( don’t skip this step as it really makes the buns super yummy) stir 2 tablespoons of caster sugar in 1/3 cup of water in a saucepan over low heat u til the sugar dissolves. Simmer until the glaze thickens. Transfer buns to a wire rack, brush with glaze and set aside to cool slightly.
