Steak & Salad.
One of the easiest BBQ meals on the planet. Also one of the most boring. Today I have spiced up a regular serloin and made it into a Simply Stunning Summer Salad. Lets get our steak on!
BASIL & CASHEW CRUSTED STEAK SALAD
2 x 1nch thick slices Serloin Steak
4 Garlic cloves
1 large handful fresh Basil (leaves and stalks)
1/2 cup plain unsalted Cashews
A good drizzle of Olive Oil
2 handfuls per person of Mixed Salad leaves (Cos, Spinach, Rocket, Baby beetroot leaves)
1 punnet Cherry tomatoes, halved
1/2 block Fetta cheese
1/2 small Red Onion – sliced thinly
1 x handful unsalted cashews – roughly chopped
For the Dressing:
1 x Garlic clove
1 pinch Salt
Juice of 1 x Lemon
Splash of Olive Oil
THE HOW TO:
Preheat your BBQ and make it nice and hot;
Grab your food processor and chuck in your basil, cashews and garlic.
Process until its well chopped. Then slowly, keeping the motor running, add in a stream of the olive oil until you get a nice pesto looking consistency. Remove to a bowl;
Take a large chopping board and smear a good few spoonfuls of the pesto onto it. Flop the steaks down on top and add another dollop of pesto on the top. Use your hands and smear the steaks around in the pesto until they are nice and covered;
Place your steaks on the BBQ and cook until med rare (or however you like it).
Remove to a plate, cover & rest while you make the salad;
On a nice board or serving plate, lay out your salad leaves. Sprinkle over your chopped tomatoes, onion slices, fetta and cashews;
Take your steak and slice it up on an angle. Lay out your slices on top of the salad. Crush your garlic & salt in a Mortar & Pestle, add your lemon juice and oil, give it a good mix and spoon it liberally over your salad.
Hey Pesto!!! You have just made dinner!
Served up with some fresh crusty bread and a nice cold bottle of Vino and I think anyone would be happy to join you for tea:)
