Its a simple combination really, Beef, Mustard and Cheese. The basics of a great meatball sub!
For a fast workday dinner or a great party meal, you can’t go past this litle winner!
YOU WILL NEED:
Hot Dog Rolls
Wholegrain Mustard
Thin slices of cheese – tasty or swiss work best
Whole Egg Mayo
Herb Meatballs
Baby Salad leaves
Herb Meatballs
250g beef mince
1 x small brown onion – diced
Pinch of Salt
Good grinding of cracked black pepper
Good pinch of dried thyme (or fresh if you have it)
1 x egg yolk (or you can omit if necessary)
Mix all ingredients well. Using wet hands, divide mixture into four and each into four again.
Heat some oil in a saucepan on a medium heat and fry until cooked.
THE HOW TO:
Split your hot dog rolls lengthwise and spread one side with egg mayo and the other with mustard;
Lay some cheese slices down the middle, slightly overlapping each one (you’ll probably need about 2-3 slices per person);
Top with a row of hot meatballs and cover these with a generous handful of the salad mix;
Serve up and enjoy!

Great idea. My hubby would love this one. It would make an nice easy weekend meal.
It really does! So easy too – even my kids thought it was great!
