I’m on a bit of a Spanish bend at the moment. Not surprising since the food is delish!
I was watching the TV the other day and heard of a peasant dish which I just had to try. By no means is it accurate, I’ve slightly adapted the recipe to suit myself however at its core its the same dish. Simple, Hearty and Satisfying!
Spanish Beans with Chorizo and Bacon
YOU WILL NEED:
400g cannellini beans (I used canned, if you use fresh remember to soak overnight and cook prior to use)
1/2 chorizo sausage, sliced thinly into half moons
4 rashers streaky bacon – thinly sliced
2 x cloves garlic, diced
A good pinch smoky paprika
A good lug of olive oil
1/2 cup cream
Salt & Black Cracked pepper to taste
THE HOW TO:
Heat a saucepan on medium heat and add the oil, garlic, bacon & chorizo. Fry until the chorizo starts leaking its red oils.
Add in your Cannellini Beans and stir for about a minute or two. I like to smash up about a 1/4 of the beans slightly – it thickens the dish a little and makes it extra creamy.
Add your cream, pepper and paprika and stir to combine.
Have a taste!! If you think it needs some salt – add here to suit yourself.
Top with a little extra Paprika to serve and dig in. This dish will serve 2 as a side dish or one very hungry person as a main. Add in some crunchy bread and you are good to go!!
