Right. I swear to you. This is one of THE EASIEST meals ever. Hands Down. Finito.
Gazpatcho is a Spanish dish, a cold tomato soup. It sounds strange however its great on a hot summers’ day. Very refreshing!
Use it as I did for a dinner party starter or for a cold item on a menu platter. No worries! It Rocks!!!
Gazpatcho
All you need is:
1 x green capsicum – deeseeded and chopped
2 x cloves garlic – chopped
1/2 cucumber – peeled and chopped
4-5 large tomatoes – blanched in water to remove the skins
1/4 loaf yesterdays bread – soaked in 100mls water
1 x lug good olive oil
black cracked pepper
salt to taste (almost none)
THE HOW TO:
Peel and chop all your veg and put aside in a bowl
Boil some water and pop in your tomatoes for 2 mins or until skins start peeling back
Peel tomatoes and place all ingredients in a food processor or blender and whizz until smooth
Place in fridge to chill for at least 2 hrs prior to serving….prefrably longer!
I used shot glasses with a topping of baby basil leaves and good olive oil to serve. It made a fantastic appetiser and my guests loved it!!
You could also use a topping of Jamon, Chargrilled Red Peppers or Quail Eggs, soft/hard boiled. Any of these would be just as fantastic!!
NOTE: Remember if you want to do Gluten free……just use gluten fee bread!!!
