I originally found a recipe for rice bubble biscuits a while back, and I’ve twisted it around to suit our tastes.
So now we have….
Fruit & Choc Bubble Biscuits
You’ll Need
1 cup SR flour
1 cup Rice Bubbles
1 cup dessicated coconut
1/4 cup sultanas/dried blueberries/ chopped dried apricots(whatever you have on hand)
1/4 cup choc chips
1/2 cup caster sugar
125 g butter, melted and cooled slightly
1 egg/or egg replacer equivalent, lightly beaten
Flatten biscuits slightly with the back if a fork.
This is where I am more than a little embarrassed to say I don’t have an end product photo. I made this batch right before dashing off to work. I grabbed a bunch to snack on at work and a few extras for the kids to eat on the way to A1′s work for kiddy-swap.
Then obviously they and A1 had more. Then we had a few more for morning tea and I realised they were all gone and no photos! Oops!
They ARE delicious – obviously…
It’s a great one to involve the kids in, from adding the ingredients to rolling the dough into balls.
The mixture also freezes well so you can roll into a sausage shape, cling wrap and bag it up. When you want to to cook with it, then just slice into rounds and bake as usual. No need to thaw.
