So I’ve spent most of my evening (and a chunk of my arvo) going through my stash of bookmarked (online) and dogeared (magazines) recipes, working out a meal plan for the next fortnight.
I’ve been sitting here with a sizeable glass (or two) of G&T focussing on freezable slow cooker meals and trying to find a slow cooker recipe that might use up some of the tomatoes/eggplant/capsicum/chillies that Dad gave us – thinking I might be able to make a slow cooker pasta sauce.

11pm and I’ve finished – woot. A bit more shopping list fixing to do, but the planning will be worth it. The last week has been a rough one for me. I’ve been SO tired, just fighting off a cold that has been threatening for a couple of weeks and feeling weighed down by Winter fog – literally it’s been so foggy at our place all week! Pretty much like this all day, every day (this was taken on Tuesday after dropping Miss E at care)…

I’m hoping to have a big preparation afternoon tomorrow and getting most of the freezer friendly ones done in advance…
So, mostly for my records – here is our fortnight (Sundays are left free for A1 to cook).

Week 1

  • Monday: Lamb Kofte with couscous (recipe: Super Food Ideas April Issue p.27)
  • Tuesday: Beef Lasagne (no recipe, I just wing it)
  • Wednesday: Sticky Chinese Chicken (SFI April Issue p.61). Halve and freeze
  • Thursday: Oven Baked Sausage & Tomato Risotto (Taste Online)
  • Friday: Beef Goulash & Dumplings – (Sally Wise Slow Cooker recipe)
  • Saturday: Home made pizza (I make up the dough in my bread maker – its the Breville recipe with a couple of minor tweaks) & Foccacia (again with the Breville)
  • Week 2

  • Monday: Slow Cooker Chicken with Honey Sauce (Freezer recipe from Melissa Fallis Test Kitchen blog)
  • Tuesday: Tuna Bake (sadly this is a jar version. I’ve yet to find a recipe they prefer!)
  • Wednesday: Family Beef Pie (SFI April Issue p.58)This is enough for two meals for A1 & the kids when I am working, so the leftovers get frozen
  • Thursday: Slow Cooker Sesame Chicken (another Freezer recipe from Melissa Fallis Test Kitchen blog)
  • Friday: Slow Cooker Meatballs (adapted from the recipe at Can You Stay For Dinner?)
  • Saturday: classic Chicken Kiev (SFI April p.49)
  • So that’s our fortnight. I’ve also made note of recipes for:

  • Twice cooked potatoes to prepare from the same Melissa Fallis Test Kitchen blog posts as the ones above (freezer friendly)
  • Rice Bubble Cookies (I posted the recipe for these on our Honey You Baked Facebook page a while back.)
  • Mini Anzac Cookies
  • Cheesy Lunch Muffins (freezer friendly)
  • No Knead Artisan Bread
  • Easy Peasy Banana Bread
  • Cheesy Sausage Tarts (freezer friendly) and
  • Pikelets
  • I’ll pop links to recipes for these little extras on our Facebook page if and when I do them… Depends on how my week pans out :)

    If anyone has any freezer friendly recipes they are happy to share – comment below, I’d be keen to try them.

    ETA – I can’t believe this is what my Saturday nights have come to. At least I won’t be trudging home at 3am barefoot, carrying stupidly uncomfortable heels and feeling ill after a drunken nightcap of greasy potato cakes (scallops for you Mainlanders)…
