So I’ve spent most of my evening (and a chunk of my arvo) going through my stash of bookmarked (online) and dogeared (magazines) recipes, working out a meal plan for the next fortnight.
I’ve been sitting here with a sizeable glass (or two) of G&T focussing on freezable slow cooker meals and trying to find a slow cooker recipe that might use up some of the tomatoes/eggplant/capsicum/chillies that Dad gave us – thinking I might be able to make a slow cooker pasta sauce.
11pm and I’ve finished – woot. A bit more shopping list fixing to do, but the planning will be worth it. The last week has been a rough one for me. I’ve been SO tired, just fighting off a cold that has been threatening for a couple of weeks and feeling weighed down by Winter fog – literally it’s been so foggy at our place all week! Pretty much like this all day, every day (this was taken on Tuesday after dropping Miss E at care)…
I’m hoping to have a big preparation afternoon tomorrow and getting most of the freezer friendly ones done in advance…

ETA – I can’t believe this is what my Saturday nights have come to. At least I won’t be trudging home at 3am barefoot, carrying stupidly uncomfortable heels and feeling ill after a drunken nightcap of greasy potato cakes (scallops for you Mainlanders)…
